It seems like every time I stay in New York, we have omelets for breakfast. I don't know why I never made omelets more often, often going for scrambled eggs over omelets. But really, omelets are worth the extra few minutes. Just for the shear fanciness.
Eggs are cheap. I am cheap. I am an egg? No, there's a bit of a flashback to this. Back in the days when I had just moved out on my own, I ate way too much ramen, mac and cheese, and eggs. (Back then, tuna cost 25 cents!). Healthy stuff, I know. Now that I find myself without income, I'm modifying my eating to be conscientious of cost and nutrition, and really, eggs are cheap (really cheap here). So, I'm enjoying egg white omelets (with a yolk or two) for breakfast about twice a week.
And this morning, while reading the NY times on line- I came across these two stories, about some of my favorite things. Cat Steven's, and Denver.
I'm having Sunday, on Saturday. Just about to finish my coffee, read a little for work, go for a nice run, and then have a late lunch with an acquaintance from Ireland, and then dinner with some other folks.
We're on-call tomorrow.
